How to make ketchup

Media is reporting that there is a looming ketchup shortage, due to drought in the area of California where 40% of the world’s sauce tomatoes are grown.

Ketchup prices have already risen 27% and sauce prices have climbed 17%.  If the drought impacts tomato supply as expected, then ketchup could become much more expensive, if you can find it.

But never fear … homemade ketchup is here!

Ketchup is mostly tomato sauce, but with added flavorings to give it that unique character.  Below is a homemade ketchup recipe sent to me from a contact on social media.

Ingredients

  • 12-ounce can tomato paste
  • 2–4 tablespoons sugar, to taste
  • 1 teaspoon salt
  • ½ teaspoon cinnamon
  • ⅛ teaspoon cloves
  • ⅛ teaspoon allspice
  • ⅛ teaspoon cayenne
  • ½ teaspoon garlic powder
  • 1 teaspoon onion powder
  • ¼ cup white wine vinegar
  • ½ – ⅔ cup water

Directions

Mix all ingredients except water, then gradually mix in water until the ketchup is at your desired consistency.
